Let's go through the steps required for a delicious Greek coffee !
1. You will need a clean and dry coffee pot (briki) (preferably made of bronze). Fill the briki with as many coffee cups of water (preferably lukewarm) as the number of coffees you want to make.
2. Using a special teaspoon, add a full spoonful of Greek coffee for each coffee cup and as much sugar as desired.
3. Turn the heat to medium and place the briki on top. Stir slowly until the coffee and sugar dissolve (Do not stir the coffee after the first stir).
4. Do not rush, heat the coffee slowly. Once the coffee starts to bubble up, remove it from the heat and knock the briki gently against the bench 2-3 times. This makes the coffee settle a bit.
5. Return the briki to the heat and when the coffee begins to bubble up again, remove it from the heat, wait a few seconds and pour it slowly into a traditional Greek coffee cup.
6. When serving the coffee, evenly divide the foam among all the cups, then fill the cups with the remainder of the coffee, taking care not to disturb the foam.
